140g artichoke in olive oil (drained)
Small handful of watercress
1 garlic clove, crushed
¼ tsp chilli flakes
Olive oil for drizzling
2-4 slices of white crusty bread
For a basil sauce to serve:
Large bunch of basil
120ml olive oil
1 garlic clove crushed
Pinch of salt
Preheat oven to 200 degrees Celsius.
Place the artichokes in a bowl with the chilli flakes and a drizzle of olive oil. Season lightly with salt.
Place the bread on a baking sheet and scatter the crushed garlic over the top along with the sliced mozzarella. Drizzle with olive oil and bake for 10 minutes.
Spoon the artichokes over the bread and mozzarella just before eating.
Serve with sprigs of watercress and a basil sauce if desired. For the basil sauce blend all ingredients together until smooth.
