400g Fresh Blueberries
400g Jam Sugar
3 tbsp Elderflower syrup
3 tbsp Gin
Mash the Blueberries with a masher and mix them with the Jam sugar to release the moisture from the berries.
Add the elderflower syrup and Gin.
Bring the mixture up to boil over medium heat, stirring occasionally.
The Blueberry, elderflower and gin jam will be complete when the temperature reaches 105ºC, in about 40 minutes.
Remove the jam from the heat and transfer it into to a clean Jam Jar with the help of a Jam Funnel.
Cool to room temperature and label the jam.
