Quick, easy, super tasty pasta for dinner.

Ingredients:

400g Dried pasta

Salt and pepper

2 tbsp extra virgin olive oil  

210g Caramelised onion chutney  

6 Anchovies drained from oil

1 Fresh Red chilli chopped

80g Pitted green olives

1 tbsp red wine vinegar

2 tbsp fresh flat parsley  

50g grated parmesan cheese to serve

 

Method:

Cook the pasta in a large saucepan of salted boiling water for 9 minutes or until al dente.

Drain, reserving ½ cup (125ml) of the cooking liquid, and set aside as this is full of starch and helps bring the sauce together.

While the pasta is cooking, heat the oil in a frying pan over medium heat and add the chilli

Spoon in the onion chutney, anchovy, olives, salt and pepper and cook, stirring, for 4 minutes.

Add the vinegar, reserved cooking liquid and pasta and cook for 1 minute or until heated through.

Finish with the chopped parsley and parmesan to serve.

Always remember to finish your pasta with a drizzle of your best extra virgin olive oil for that silky texture, it makes all the difference!
