2tbsps sunflower oil
2 chopped onions
1 crushed clove garlic
1 level tsp ground cumin
1 level tbsp chilli powder
500g lean minced beef
400g can chopped tomatoes
1 level tsp dried oregano
1 bay leaf
1 level tbsp tomato pure'e
400g can kidney beans, drained
50-75g dark chocolate
In a large saucepan heat the oil, add in the onion and garlic and cook on a medium heat for around 10 minutes. Once the onion has softened add chilli and cumin and cook for another 3 minutes.
Add minced beef and cook until the mince has browned all over. Add tomatoes, oregano, bay leaf and tomato purÃ©e and bring the mixture to the boil.
Once boiled allow to simmer on a gentle heat for 30 minutes.
5 minutes before you are ready to serve add the kidney beans into the mixture and heat through. Add the chocolate and stir until melted.
Serve chilli con carne in a taco with shredded lettuce and grated cheese on top.
