Serves 41kg medium sized potatoes
2/3 tbsp olive oil
1 tbsp sea salt
Using a sharp knife, cut a small slice off the bottom of each potato so that the sit on the roasting tray without wobbling.
Cut slices into each potato half way down so that the potatoes don’t break up.
Drizzle them with olive oil and sprinkle with sea salt.
Roast in the oven for 1 hours until tender in the middle and crispy on the outside.
