400 g Dried Figs, stems removed

4 tbsp Dark Rum

4 tbsp Lime Juice

800ml water

1 small piece of fresh Ginger

3 tbsp Brown Sugar

3 tbsp Sugar


Add the figs, rum, lime juice, water and ginger to a saucepan and bring to the boil.

Reduce the heat and cover. Leave to simmer until the figs become tender, this should take roughly 15 minutes. 

Let the mixture cool down. Once cooled, add to a food processor or a blender and process or blend until smooth

Stir in the sugar. Stir continuously over low heat for 10 minutes or until the mixture thickens enough to be spread.

Spoon the spread into warmed dry jars, seal and leave to cool.

Store unopened in a cool, dark place. Chill once opened.
