Ingredients
400g Figs
200g Sugar
½ lemon juice
1 tbsp Honey
1 tbsp chopped Thyme

Method

Rinse the fresh figs well and dry them with a kitchen towel.

Chop the figs in quarters and put them in a saucepan along with the honey, sugar, lemon juice and thyme.

Bring the mixture to a simmer over medium heat, stirring constantly with a wooden spoon.

Continue to simmer, frequently stirring, until figs are soft and the jam acquires the proper consistency. 

The jam will be ready when it becomes sticky and it drops heavily from the spoon.

Remove the Fig Jam from the heat and transfer to a Preserving Jar, leaving ¼ inch space to make vacuum.

Let the jam cool to room temperature.
