If classic biscuits are your jam, you'll heart these German Linzer Cookies! They are the perfect festive bake for you and your family to share... or not share!
What you’ll need

- A mixing bowl: MasterClass Smart Space Mixing Bowl Set
- A jam thermometer: Taylor Pro Stainless Steel Jam Thermometer
- Some cutters: Colourworks Set of 5 Star Shaped Cookie Cutters
Ingredients
- 250g softened butter
- 125g sugar
- 1 large free-range egg yolk
- 1 tsp vanilla extract
- 310g plain flour
- 60g ground hazelnuts
- 200g raspberry or strawberry jam
- 30g icing sugar
Method
Place the flour and hazelnuts in a food processor and blend together to create a hazelnut flour ready for the biscuits.
Beat together the butter and sugar until light and fluffy.
Add the vanilla and egg yolk and continue to mix.
Add the nut flour and mix into a ball of dough.
Roll the biscuit mix into a log shape and place in the fridge for 30 minutes.
Slice the dough into 1/2cm pieces and cut out into circles
Transfer the biscuits onto a non-stick baking tray.
Using a small cutter, cut out a centrepiece in half of the biscuits.
Bake for 10-12 minutes or until golden.
Heat the jam and place a teaspoon in the denture of the biscuits uncut.
Place the cut biscuit on top and dust with icing sugar.
