Ingredients:
100ml red wine vinegar
2 cantaloupe melons
4 tomatoes, roughly chopped into different shapes
1 red onion
4 tbsp extra virgin olive oil
100g diced feta cheese
1 handful of fresh mint leaves
2 tbsp red wine vinegar
2 tbsp honey
Method:
Cut the skin away from the melon and chop in half, remove the seeds and cut into slices.
Place the sliced melon into a mixing bowl and pour over 100ml of red wine vinegar.
Leave the vinegar and melon to stand for 1 hour to pickle.
Drain off the excess liquid before adding the freshly chopped tomatoes and sliced red onion.
Mix with olive oil and spread out onto a large serving plate.
Sprinkle over the crumbled feta and fresh mint leaves.
Finally, drizzle over the honey to finish the salad before serving.
