6 cups fresh baby spinach

50g ricotta cheese

1 pint strawberries, hulled and sliced

1 large ripe avocado, chopped 

1/3 cup extra virgin olive oil 

3 tbsp. apple cider vinegar

2 tbsp. honey

1 tbsp. poppy seeds

Salt and pepper


In a bowl combine the olive oil, apple cider vinegar, honey, salt and pepper and poppy seeds and pour into an oil drizzler.

In another bowl, gently toss the spinach, avocado, and strawberries together. All the ricotta cheese on top and drizzle with the dressing.
