The ultimate toastie packed with warm cheesy goodness.


2 Free range egg yolks

1 tbsp Mascarpone cream

Salt and pepper

1/2 tsp Dijon mustard

100g Mature cheddar cheese grated

100g Mozzarella cheese grated

50g Parmesan cheese finely grated

80g Salted butter softened

8 Slices of bread



Place the egg yolks, mascarpone and mustard into a mixing bowl and stir together.

Season with a little salt and pepper, then add the cheeses and mix together.

Divide the cheese mixture between 4 slices of bread and spread it to the edges.

We like to use our homemade Marmite and Walnut Bread for this as it makes it extra special.

Top with the remaining slices of bread, then spread the butter on the outside of the bread generously.

Preheat a frying pan and toast on both sides on a low to medium heat making sure you don’t burn the bread.

When golden, transfer to the oven for 8 minutes to melt the cheese and serve.
