Madeleines flavoured with ginger, orange and spices put a festive twist on this French classic.

Makes 12-16 madeleines.


100g plain flour

100g melted butter

100g soft brown sugar

2 free range eggs

1 tsp baking powder

1 orange, zested

1 tsp mixed spice

½ tsp ground ginger

1 tbsp oil


Pre-heat oven to 180°C.

Whisk the sugar, orange zest and eggs together until they forms a fluffy and light in colour mixture.

Pour in the melted butter and mix.

Sieve the flour, mixed spice, ginger and baking powder together. Add this mixture a quarter at a time to the wet mixture and fold in. 

Grease the madeleine tin with the oil.

Pour one tablespoon of the mixture into each madeleine mould.

Bake for 10-12 minutes until golden brown.

Allow to cool then turn onto a cooling rack to cool completely.
