Serves 6

Ingredients:
  • 180g leftover cooked ham
  • 1 apple (we used Granny Smith)
  • 10g sugar
  • 3tbsp maple syrup
  • 1tsp chilli flakes
  • 1 lime (juiced)
  • 2 spring onions
  • 6 Bao Buns (we used frozen ones, we defrosted overnight)

Method:

Preheat the oven to 170 degrees fan oven.

Shred up the ham and reheat in a pan.

Peel, core and chop the apple into 6 pieces.

Place a frying pan on the heat and sprinkle in the sugar, leave the sugar to caramelise slightly and then add in the apples. Cook until soft.

Add the syrup, chilli flakes and lime juice to the shredded ham.

Chop the spring onions and open up the bao buns.

By now the apples should be cooked and can be removed from the heat.

Start to fill the bao buns, fill evenly with the ham and add a slice of apple to each. Place on a baking tray splash with water, cover with kitchen foil and heat in the oven for 6 minutes.

After six minutes remove from the oven top the buns with the spring onion and eat immediately.
