850ml water
3 Limes
3 Lemons
Peel of 1 lemon
Peel of 1 lime
200g sugar


Cut the limes and lemons in half and squeeze them into a large pot.

Cut the peel of one lime and one lemon into 1 cm strips

Pour the water onto the pot and bring it up to simmering point.

Let boil for about 40-45 min, until peels are soft.

Add the sugar and heat on medium high for 20 minutes more, stirring frequently.

When the lime jam reaches a temperature of 105 ºC remove from heat and transfer to a Preserving Jar, leaving ¼ inch head space at the top for a vacuum seal.
