100g digestive biscuits 

100g leftover mince pies, chopped into chunks 

70g sour cherries or dried cranberries 

135g butter 

230g 70% dark chocolate 

3 tbsp golden syrup 

100g mini marshmallows 

70g melted white chocolate 




Break the biscuits up in a bowl and mix with the mince pies and mini marshmallows. 

Melt the butter, chocolate and golden syrup together in a mixing bowl then place over a pan of simmering water. 

Pour the biscuits, mince pies and marshmallows into the melted chocolate along with the dried fruit and mix. 

Line a 20cm square tin with parchment paper and pour the mixture in, using the back of a spoon smooth out the mixture, then drizzle the melted white chocolate over the top to decorate. 

Place in the fridge for 2 hours to set.
