Vegan Buffalo Cauliflower Tacos

Sticking to a vegan diet doesn't have to mean compromising on taste. These spicy cauliflower tacos will give you just the right amount of heat, crunch and flavour to satisfy your cravings!
What you’ll need
- A mixing bowl: MasterClass Smart Space Mixing Bowl Set
- A mixing spoon: KitchenCraft Beech Wood 30cm Spoon
- A roasting tray: MasterClass Non-Stick 35cm x 24cm Rectangular Deep Pan
- 1/2 head of cauliflower
- 4 tbsp olive oil
- 1 tsp garlic
- 100ml buffalo sauce
- 8 small tacos
- 2 baby gem lettuce
- 1 avocado
- 1 lime
- 1 handful coriander
Cut the cauliflower into small pieces.
Mix together on a large bowl the oil, garlic powder and buffalo sauce.
Add the cauliflower to the sauce and mix together well.
Pour the cauliflower onto a baking tray and cook in a pre heated oven for 20 minutes at 200c or until tender.
Serve the cooked cauliflower in to tacos with peeled and sliced avocado, chopped lettuce and fresh coriander leaf.
Finish with a squeeze of lime juice before serving.
