Serves 4


600g Pumpkin, peeled and cut into chunks

2 tbsp Olive oil

Salt and pepper

2 Garlic cloves

2 tsp Ground cumin

2 Red chillies chopped

2 tbsp Chopped fresh coriander

100g Feta cheese

60g Grated mozzarella cheese

50g Walnuts broken

8 10” Tortilla wraps

Here’s how

Place the diced pumpkin onto a baking tray and drizzle with olive oil, salt and pepper.

Add the garlic cloves and roast in the oven for 30 minutes at 170c or until the pumpkin is tender.

Once cooked, remove from the oven and place in a mixing bowl.

Add the cumin, chilli, coriander, feta, mozzarella and nuts before stilling together

Divide the mixture onto 4 of the wraps and spread out evenly.

Top with the remaining wraps and place on baking trays.

Cook in the oven 170c for 10-15 minutes or until golden and crisp.

Remove from the oven and cut into wedges before serving.

Try serving with sour cream to dip!
